Black fish is an animal belonging to the family Ophichthidae and the genus Ophichthidae. It has a long and round body, with the same head and tail, thin scales, black color, and spotted patterns. Cut the black fish meat into thin slices, place it in a container, add scallions, ginger, garlic, and Shaoxing wine to marinate for a while, and mix well with starch and egg white. Blanch the tomatoes in boiling water, peel them, and cut them into small pieces. Heat up a wok, add an appropriate amount of cooking oil, stir fry scallions, ginger, and garlic, add fish slices and fry briefly before serving. Add small pieces of tomatoes and stir fry until they become a paste. Then add tomato sauce and stir fry until red. Add broth and rock sugar and bring to a boil. Finally, add fish slices and monkey head mushroom slices and simmer for a while.

Clean the black fish and cut the meat into thick slices. Wash the loofah and cut it into rolling blocks. Add salt and cooking wine to the fish slices and mix well. Rinse thoroughly with running water, then season with salt, seasoning powder, pepper, and cooking wine. Add an appropriate amount of cornstarch and stir well. Boil water in a pot, blanch the luffa chunks, and place them on a deep plate. Put the fish slices in and blanch them.
